I make this every year for Christmas, so I thought I might share it here.
Should be prepared a day in advance.
Ingredients:
- 1.5 – 2kg small potatoes, firm cooking such as desiree
- 6-8 boiled eggs
- 2 Chirizo sausages, diced
- 500grams pickled gherkins (Polish or similar)
- a container of good mayo
- a container of Caesar dressing or similar
- salt and pepper
- white wine or apple vinegar
- Optional: some finely chopped fresh mint
Process
- Boil potatoes and ensure they are just cooked but still firm, scare them and set aside until cool enough to handle and then peel, set aside until cold
- hard boil eggs, scare and peel, set aside until cold
- into a large bowl (5-7 litre), dice Chirozo, gherkins and mix with all of the mayo and dressing, stir well and add teaspoon of salt and pepper and 2-3 tablespoons of vinegar
- slice the potatoes about 5mm thick and add to bowl, stir every layer into wet ingredients
- slice eggs and stir into salad
- set aside for a couple of hours, covered in fridge
- check taste and add salt, pepper and vinegar as desired, repeat next day
